Here and here (scroll down to Yellow's Journey), but I've summed it up with (a lot of) the help of both (as one is more detailed and another only denotes important events, as well as the fact they missed some minor details like the first one), so...!
In canon, it is unknown how Yellow came to live with her ‘Uncle’ Will, however it is theorized that she was abandoned as a child as soon as she'd been born. Despite being conscious of the fact that she and her Uncle weren't related, she was still happy, and lived in the Viridian Forest with him regardless. One day, as a young girl, she was attacked by a rampaging Dratini. Her savior ended up being Red, a Pokemon Trainer who was passing by. He taught her about Pokémon and how to treat them with love and care, as if they were one's friends! Not only this, but the raven-haired boy helped her catch her first Pokémon ever, Rattata. Later, she met Blue— whom soon was like an elder sister figure to her. Being sent in order to complete the mission she was given, Yellow disguised herself as a boy named Amarillo del Bosque Verde for safety reasons and travelled throughout the Kanto region. To accomplish the mission she was given, she trained under Green. When she learned of evolution through this training (a necessity), however, she cried and cried and cried, thinking her Pokémon had been changed and all their memories of the times they had spent together had disappeared. Due to this, she dislikes evolution, and has a minor fear of it, which she is quickly getting over. As time passed, she made friends, caught new Pokémon, and eventually saved the missing Red with the help of his Pikachu, Pika, who accompanied her during her journey.
After defeating the Kanto Elite Four Champion and accomplishing her mission, she went back to her regular life in Viridian Forest.
Later on, she and her Uncle along with Pika and the newest addition to the team, Chuchu, a Pikachu just like Pika, embarked on a new voyage to the Johto region in search of the legendary Pokémon called Lugia. At the time, this Pokémon resided in Cerise Island. While on this journey, they accidentally freed the legendary beasts of Ecruteak City that lived in Burnt Tower (Entei, Raikou and Suicune) due to the Silver and Rainbow Wings hidden within the feathers of her straw hat.
Once Yellow’s encounter with Lugia was over, she was led to the Goldenrod Daycare Center. The young healer later joined the other Pokédex Holders in the final battle against Mask Of Ice at Ilex Forest. Yellow, again, returned home.
Yellow decided to visit the Viridian Gym one day, and encountered Silver, who was there to learn about his past and possible hometown. Yellow aided him with her ability to read the minds of Pokémon, and discovered that Silver was the long-lost son of Giovanni during their double battle against Team Rocket.
Silver was kidnapped, Yellow chased them and soon found herself on board the Team Rocket Battle Airship. There, she encountered Red and Deoxys, whom she mind read to reveal the connection Red and the outer space Pokémon shared. When the Battle Airship started to fail, Red sent Yellow and Mewtwo away in a black hole, and Yellow remained unconscious due to exhaustion. She was still unconscious when she became petrified afterwards by Storc’s mysterious attack, along with Red, Green, Blue and Silver.
2 months later, Mr. Briney shipped the petrified Dex Holders to the Battle Frontier via the S.S. Tidal. The petrifaction of the five seniors is not reversed until Emerald, the strategist of the Dex Holders, is finally able to channel his wish to Jirachi, the wish granting Pokémon. Yellow quickly joined the battle after regaining mobility. When the combined grass, fire and water ultimate attacks failed, she synchronized her mind & spirits with Pika, Chuchu, and Gold’s Pichu to deliver a combined electric ultimate attack called Volt Tackle. This put an end to the crisis threatening the Battle Frontier.
She then entered a tournament between the Dex Holders, in which she lost at some point. It is not stated when or how she lost, just that she did, which is really no surprise. This is where the Emerald arc ends, and it is also where we last see Yellow.
Appearance:
This is what she looked like in the FireRed & LeafGreen chapter- her general appearance has not changed since this chapter! Except that maybe her hair got a bit more detailed, if anything. However, if you wouldd like a better representation of how she's looked throughout the chapters, there's also this!
Personality:
Yellow is an extremely compassionate, benevolent, and kind-hearted individual. She can understand the seriousness of a situation and will be serious when needed or when she thinks it is necessary. Being the optimist she is, though, she will always look at / try to find the bright side. She believes there is good in everybody’s heart, somewhere, and loves to make new friends. Not to mention that other people, especially her friends, always come first. It is probably why most people compare her to sunshine- she just seems to enjoy brightening up other people's day!
She is a pacifist, and will only fight when necessary. She greatly dislikes violence; she would rather make friends and allies than enemies, and will try to in every situation. To add onto this, she is naive and gullible, leading to her being easily tricked into doing things she may or may not regret later. However, she is not an idiot. She may sometimes be suspicious of people’s ulterior motives if they give her reason to do so, and she can detect wrong and right in most situations while sticking to her beliefs. She has put a lot of trust into her friends, and seeing or knowing of them doing wrong is hard for her to swallow. It is equally hard to make her believe in something she is against, though most people don’t understand why anyone would bother. Her heart’s in the right place, after all, and she is always willing to help others. Why would anyone try to change that aspect of her?
Yellow rarely holds grudges, and if she does, they can usually be dispelled rather quickly. However, she is a very magnanimous and generally forgiving person in a lot of situations.
During her adventure, it is noted that Yellow hid her gender so others would not recognize her and went by an alias, Amarillo del Bosque Verde. However, once the threat was subdued, she continued to wear her trademark straw hat from force of habit, and never corrected others when they assumed she was a boy. Sadly, this escalated to the point where she had a hard time revealing the long blonde locks to people, as she felt not only embarrassed, but somewhat guilty for deceiving them without really realizing it.
It is important to mention that Yellow is a brave and determined individual, and that when an obstacle presents itself, Yellow will persevere and find a way around or through it! While certainly not fearless, she does set off to look for the missing Red in her arc at the age of around ten, which is an impressive feat. She also demonstrates confidence when undertaking this feat, stating that she will locate Red. Not that she'll try, but that she will.
She is also innovative, figuring out she could manipulate a Poké Ball on a string and therefore have an easier time fishing. Also instead of freaking out or breaking down in pain during her battle with Lance when her arm had been broken, she simply made a makeshift cast using her Caterpie's Stringshot and dealt with it, not shedding a single tear in response.
Yellow's disposition, like any other human being, depends on her mood, though by default it is quiet and a little blunt. She is known to get flustered and embarrassed really easily. She is still a child at heart, and thus, is prone to childish beliefs and actions as any other kid would be. The only real difference is that she can be much more mature than them.
One last note that, all in all, seems pretty obvious but is still kind of important. She loves the heck out of all Pokémon and fauna—so, she is a nature lover. That's pretty much it.
Abilities:
Every several years, a child born in Viridian will be blessed with special abilities, such as the ones Yellow has. She, of course, is one of them, along with Lance. They are explained in the next two paragraphs.
By placing a hand over a Pokémon’s forehead, she is able to read their thoughts, emotions, and memories, as well as heal their wounds. She is gifted with limited telekinesis; it is enough for her to manipulate her pokeball, such as the time she caught a Seadra, or when she moved her Pokemon (still in their pokeballs) out of the way to prevent them from getting hurt.
Yellow can ‘synchronize her spirit’ with the powers of her Pokémon, enabling their levels to skyrocket around the mid-80s. Doing this wears her out, however, and causes her to fall asleep or pass out afterwards. The same can be said of her other powers (healing, telekinesis, and mind-reading)- but they only really wear her out if used too much, rather than one go. Beside this, she does not get fatigued or tired all that easily. She does fall asleep easily, however...
On a side note, Yellow draws well, and usually carries a sketchbook with her. Of course, this is probably going to be confiscated...

I feel like her battling style is important, so I will put it here!
Her battling style is rather defensive, as she tries not to let her Pokémon or the opponent's Pokémon get harmed. The only times Yellow actually battles is when there is grave danger, either for other people, the forest, or herself. She also does not catch for sport, seeing as one: she is terrible at it, and two: the only Pokémon she needs are the ones she has, because they are her friends. She is also demonstrated a keen ability to think on her feet, even when put under pressure, which has helped her get out of a lot of sticky situations. She may be taken aback by sudden danger, but she can handle dangerous situations because of how sharp she is, making her an OK strategist.
She is quick on her feet in the literal sense, as battling require a lot of footwork, along with good reflexes. In the manga, contrary to the games, you do not sit by idly as you shout out attacks to your Pokémon. You are actually supposed to run around, possibly dodge some that may be aimed at you. She is perfectly capable and in good shape, due to all the travelling she and her team has done.
Unrelated to her battling style:
When Yellow was younger, she had a poor sense of direction and often got lost in the Viridian Forest. This has improved over the years, but they're not really top notch- especially in areas that are foreign to her- and could use some work, if working on your sense of direction is even possible.
Although Yellow is considered an official Dex Holder, she does not really own one herself, so to speak. In the Yellow Arc, she uses the one left behind by Red and returns it to him at the end. It is not until the FireRed and LeafGreen Arc, when Red gives his old Pokedex to her, that she becomes a true Pokédex Holder.

When she finally found the off button, she smiled contently. So it had been on! That was good- that meant someone had to have heard her rambling, which also meant help would soon be on the way! ...The question was, how would she know? She didn't understand how this thing worked, honestly, and it's not like she'd given her location away...
"...I don't even know where I am." Yellow mused, staring at the nearby door. She had about two options: leave the room to explore the place she was in, or wait here for a response that would possibly never come.
If anyone would have been surprised she chose to explore, then they had the wrong idea about her. "It's not like I can't come back whenever..." She told herself. With that, she opened the door and stepped outside of the room.
